also, I am rediscovering food. I made a basil pesto which would have been amazing had I owned a food processor. [I no longer want a blender, but one of those things. Oh my god, the possibilities. I would save so much time chopping, for starters.]
I used 3 bunches of basil [near closing time at the markets is a good opportunity because they go out for a dollar], a cup of pine nuts and a few walnuts toasted lightly in a dry pan, a cup of olive oil, four big garlic cloves crushed, half a cup of nutritional yeast, a squeeze of lemon juice and some salt and pepper. Crush it all together with a mortar and pestle [unless you are lucky enough to own aforementioned kitchen appliance] and add the oil as a final step. I froze the leftovers in an ice cube tray so that I can just pop out however many I need.
